1、Significantly extending the shelf life of fruits
Generally, the sweeter the fruit, the higher its sugar content (though some fruits like watermelon and peach are sweet but not high in sugar), making them more susceptible to bacterial invasion and spoilage. However, the low temperature of freezing can greatly delay or even halt the spoilage process, allowing us to enjoy the original sweetness of summer fruits even after a long period.

2、Better preservation of nutritional content
Research has found that the nutritional loss in quickly frozen fruits is extremely slow. Even after months of storage, the various nutrients in frozen fruits are not significantly different from those in fresh fruits [1]. Temperature and storage duration have a significant impact on the nutrients in fruits, especially the content of vitamins C and B. Higher temperatures and longer storage times lead to more severe vitamin loss. With the continuous advancement of food industry technology, rapid freezing can stop the metabolism and respiration of fruit cells in a very short time, thereby curbing the consumption and loss of nutrients [2-3]. Even when frozen solid, the nutritional value of fruits remains uncompromised.

3、Enhanced sweetness and new textures after freezing
Although freezing affects the flavor of fresh fruits, the sweetness remains, and can even increase. The fructose in fruits becomes sweeter at low temperatures, making many fruits like watermelon, lychee, grapes, cantaloupe, and mango sweeter when frozen than at room temperature. In terms of texture, while frozen fruits lose the crispness or softness of fresh fruits, they develop a unique taste similar to ice cream, popsicles, or sorbet. Moreover, they are much lower in fat and sugar, healthier, and more natural than most commercially available ice creams, offering a delightful eating experience.

In summary, frozen fruits are not significantly inferior to fresh fruits in terms of nutritional value and taste. As a method that greatly extends the shelf life of fruits, I wholeheartedly endorse it.
